Lentils Noodles Tomatoes Cheese Pesto

Lentils with Noodles

Lentils with Noodles is a delightful dish made with lentils, noodles, vegetables, and a flavorful pesto dressing. Optional toppings include arugula and Parmesan or Feta cheese.


  • 110 g lentils (brown lentils, red lentils, or green lentils)
  • 400 g noodles
  • 1 tsp vegetable broth
  • 150 ml vegetable oil
  • Optional: 1 jar green pesto
  • 70 g sun-dried tomatoes
  • Salt
  • 1 large red onion
  • 3 cloves garlic
  • 1-2 chili peppers
  • Optional: 1 bunch arugula
  • Optional: 70 g Parmesan or Feta cheese


  1. Cook the lentils in water according to the package instructions. In another pot, cook the noodles until al dente following the package instructions.
  2. Peel and finely chop the onion and garlic. Cut the sun-dried tomatoes. Halve and thinly slice the chili peppers. Wash and prepare the arugula.
  3. Heat 2 tablespoons of vegetable oil in a pan and sauté the onion, garlic, and chili until translucent. Add the cooked lentils, noodles, and sun-dried tomatoes, and heat through. Season with vegetable broth and salt. Toss in the arugula.
  4. Combine the remaining oil with the pesto and drizzle over the finished pasta. Optionally, serve immediately with sprinkled Feta or Parmesan cheese.
