Lentils with Noodles
Lentils with Noodles is a delightful dish made with lentils, noodles, vegetables, and a flavorful pesto dressing. Optional toppings include arugula and Parmesan or Feta cheese.
Ingredients
- 110 g lentils (brown lentils, red lentils, or green lentils)
- 400 g noodles
- 1 tsp vegetable broth
- 150 ml vegetable oil
- Optional: 1 jar green pesto
- 70 g sun-dried tomatoes
- Salt
- 1 large red onion
- 3 cloves garlic
- 1-2 chili peppers
- Optional: 1 bunch arugula
- Optional: 70 g Parmesan or Feta cheese
Instructions
- Cook the lentils in water according to the package instructions. In another pot, cook the noodles until al dente following the package instructions.
- Peel and finely chop the onion and garlic. Cut the sun-dried tomatoes. Halve and thinly slice the chili peppers. Wash and prepare the arugula.
- Heat 2 tablespoons of vegetable oil in a pan and sauté the onion, garlic, and chili until translucent. Add the cooked lentils, noodles, and sun-dried tomatoes, and heat through. Season with vegetable broth and salt. Toss in the arugula.
- Combine the remaining oil with the pesto and drizzle over the finished pasta. Optionally, serve immediately with sprinkled Feta or Parmesan cheese.
